Potato pancakes are my personal favourite (one of..)
They're easy, delicious and very filling. They can be served for breakfast, lunch or dinner. They can even go in your burger! Or served with fried eggs and sausages for full English breakfast with a twist. They can also be made outdoors if you're camping! My dad sometimes makes potato pancakes in a cast iron pan on an open fire, and these are the best! A lot of exclamation marks, but I'm very excited to share the recipe with you so you could enjoy them too!
Potato pancakes can be served on their own, with sour cream, cream fresh or even ketchup. Add dill or parsley. They go perfectly with bacon, or mushrooms (especially wild) - fried or in creamy sauce.
Simple ingredients- potatoes, onion, garlic, salt. However if you add carrot - they'll be more yellow, but it won't affect the taste. You can add more onion or more garlic, if you wish - the taste will come through in this case.
INGREDIENTS
1kg potatoes (the 'starchier' the better, I used red)
1 onion
3 cloves of garlic
1 egg
Salt to taste (I used 0.5tsp - i do like them quite salty)
Sunflower, vegetable or rapeseed oil to fry (I used sunflower)
METHOD
For best results grate your potatoes with a fine steel grater. Grate the onion and mince the garlic. Get rid of some of the potato liquid, but leave the starchy water. Add one egg, salt and mix well. The mixture will turn darker, as it's a natural reaction, however this will not affect the taste or color of your pancakes, unless you leave the mixture out for too long before cooking.
Heat a good splash of oil in the frying pan, it should be hot, but not quite smoky (unless you want them super crispy). Add a spoonful of the mixture to the pan and flatten it out to make a thin pancake, about 0.5cm thick. When the corners turn brown and the pancakes no longer stick to the pan - turn them over. Each batch usually cooks in less than 5 minutes on a medium high heat. Place the pancakes on a tea/paper towel to absorb the excess oil. Serve with sour cream and dill or on their own. Enjoy while hot (cold taste nice too!)
